I know I said I would not be sharing weekly menus until school starts, but we happen to be home and it's just so much easier to meal prep and organize what I'm going to cook for the week on the weekend so that I don't have to scramble during the week! So sharing with my family will be eating this week.
During summer, particularly, I love love love trying to incorporate all the yummy food that is in season from the farmers market- so you will see that reflected below. I'm also recipe Testing a couple to see if I incorporate them for the school year!
Summer dinners are often eaten outdoors ( I realize we are extremely lucky and not to have to deal with mosquitoes Where I live) And they are just more relaxed because of the lack of that after school activity craziness that takes place during the school year. LOVE THEM.
ps. The reality is that we eat out a lot for lunch during summer. I am fully aware that eating out is one of our main exposure routes to certain chemicals, including phthalates, but I also know that I am good about eating at home most of the year and eating out sometimes is part of enjoying so everything in balance!
Monday: Cilantro Lime Chicken and Lentils
if you have been following for a while, you know I love a weekly crockpot recipe and this one is new, protein rich and looks yummy.
Tuesday: shrimp in coconut sauce
I have been thinking of my husband's country Brazil lately ( dreaming up of where our next vacation could be!) and I keep thinking back to a trip we did over 20 years ago before we got married to Bahia.... one of the most memorable things from that trip was the food ( LOL) and this is one recipe from that trip that I have made somewhat frequently through the years. It's easy and tasty.
Wednesday: grilled fish tacos with peach salsa
I feel like this is a Quintessential summer California recipe :)
Thursday: farmers market veggies, fried rice
For this one, I won't follow the recipe word for word, but kind of get inspired by it. I will be using whatever farmers market veggies I found today and that my kids will eat.
Friday: grilled jerk, chicken and peach skewers
Yes, more stone fruits because they are just so darn good !!
