What's for dinner and school lunch this week : week of 5/25
Happy Sunday and Memorial Day weekend!
How many of you are done with school already or this week?! We still have a couple of weeks, but next week will be the last week I published this meal plan until school starts again in September!!
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 16,12 and 4.
Scroll down and you will find what I send for lunch for two of my three kids. School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: chicken and rice with pistachios and saffron: it's a one pack meal with so much flavor and depth!
Tuesday: Indian Butter Chickpeas
Skipping the serrano chile here- this is a yummy also full of flavor vegetarian dish
Wednesday: The Best Guacamole Turkey Burger
Will skip Red Bell Pepper and Jalapeño- I have made these turkey burgers so many times for the years and they never disappoint. Turkey burger is usually do not have a lot of flavor, but these are delicious. If you don't cook them this week, save it for the summer.
ThUrsday: chicken meatballs
I haven't made these before, but the reviews say they are delicious. I'm going to make a double batch and freeze Sumta have for a random summer night.
Friday: pasta Friday! weeknight ragu
SCHOOL LUNCH
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
Monday is a holiday so just 4 lunches this week!
sliced turkey, tomatoes, avocado, sandwich
Mediterranean plate: hummus, carrots, pita, cucumber, feta, grapes
pasta ( Jovial pasta for gluten free)
homemade bagel pizzas ( we use pops bagels for the gluten-free variety and just add tomato sauce and mozzarella cheese!)
