What's for Dinner and School Lunch Week of 11/10
My middle son is at a school trip all week. My older son and my preschooler have one day off from school this week… I have a moms dinner one night and a friends birthday party another night….so this is a wacky week again, but here we go!
Dinner for 2 adults (most nights), 2 kids (since one is on a class trip). Most recipes are gluten free.
Monday
Easy chicken enchiladas: roast green tomatillos and some onion and them blend thoroughly to make the tomatillo sauce. While roasting, boil the chicken and, when it is full cooked, remove from water and shred. mix shredded chicken with 1/3 of the tomatillo sauce and place inside of corn torillas, rolling them up like a flute. place them tightly rolled up (make sure tortillas are warm to avoid breaking) one next to the the in an oven safe pyrex. Depending on the size of your pyrex you might fit 6-8. top with more tomatillo sauce and shredded mozzarella cheese and place in oven until cheese is melted.

Chicken Larb from Whats Gaby Cooking (am omitting sugar and Sambal Oelek/ chilli paste)
Wednesday
Gnocci with fresh tomato sauce (gluten free option from Capello’s)
Thursday
Grilled Flank Steak with Roasted Brussel Sprout Salad with Pomegranate Seeds from Whats Gaby Cooking. I always roast my veggies on my stainless steel cookie sheet which happens to be 20% off today (with code “ VETERAN20)
Friday
Slow Cooker White Chicken Chili with my 360 stainless steel slow cooker (discount code: AIDASPICKS)
SCHOOL LUNCH
This week its just my preschooler (not gluten free) that is home and she does not have school on Tuesday… so 4 lunches
Black beans and rice (froze black beans that were left over from last week so this week we have more )
Mexican Chicken “salad” with leftover chicken with tomatillo sauce from previous night, adding some greek yogurt for creaminess, corn, drained black beans and chopped tomatoes with Top Seedz seed crackers for dipping
Leftover Chicken larb with quinoa
Pasta with garlic, parmesan and mushrooms
