What's for Dinner and School Lunch: Week of 2/23/26
Happy Sunday!
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 15,12 and 4.

School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: chana masala recipe I serve this with organic Jasmine Rice ( I buy Lundberg because they test for heavy metals like arsenic) - this is our vegetarian meal of the week but you could always add chicken! Will serve with broccoli on the side
Tuesday: sheet pan lamb meatballs with oven roasted squash
Wednesday: chicken with green tomatillo salsa served on homemade sopes- we make these rather often and basically start by roasting husked, washed, and halved tomatillos, onions, garlic on a baking sheet at 400°F–500°F (or under a broiler) for 10-20 minutes until charred and softened. blend with some cilantro. While that is cooking, boil some chicken and shredded it thoroughly when it's done cooking. Add the sauce to the chicken. The sopes are super simple to make here is a recipe . I usually serve the soap and then add some black beans the chicken and some sliced avocado on top. It's so delicious.
Thursday: Greek shrimp bowl. I had lunch out yesterday in Santa Monica and it had this super tasty bowl that I am going to try to re-create this week. No specific recipe because it's so simple it will consist of grilled shrimp with olive oil and garlic and served with tzatziki sauce, sliced pickles, sliced tomatoes, romain lettuce, olives, feta and some olive oil and lemon
Friday: pasta primavera
This is a super easy recipe for the end of the week. You can add as many or as little as these veggies as you want or as your kids will eat! I like Jovial gluten-free pasta
SCHOOL LUNCH
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
