What's for Dinner & School Lunch: Week of 2/2/2026
Happy Sunday! I know it's freezing cold in the majority of the country .... and, yeah, it's summer weather here in LA. Kind of wish there was somewhere in the middle!! This week I am making an effort to balance out cold weather comfort food with some lighter warm weather recipes.
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 15,12 and 4.

School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: sweet potato tacos
When my boys were little this is one of their favorite vegetarian meals and for some reason, I haven't made it in a couple of years! It's super simple. We just roast sweet potatoes, cauliflower ( just came home from the farmers market and got some great heirloom purple and green cauliflower I will add) in the oven with some olive oil and salt and pepper to taste. Cook some onions, have black beans on hand and call it a day
Tuesday: lasagna
Jovial has great tasting gluten-free lasagna pasta.
Wednesday: Chicken Pot Pie Soup
My gluten-free 12 year-old has been missing his favorite chicken pot pie. I have not found a yummy chicken pot pie recipe that is gluten-free so I'm going to try to make this cozy, comfy soup and see if it measures up
ThUrsday: steak fajitas
My oldest turn 16! We will be going out to dinner at his favorite restaurant, but fajitas are a good alternative that are easy to make for the weekday and you can load with veggies… I don't personally add any seasoning to the meat beyond salt and pepper. We also like to add avocado on top.
Friday: butternut squash apple soup with grilled cheese
SCHOOL LUNCH
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
Falafel, hummus, tomatoes and cucumbers
black bean, corn, tomato, avocado salad with a chicken quesadilla (on organic corn tortilla so its gluten free)
pasta with tomato sauce and parmesan
Soba noodles with carrots, edamame
mini bagels with hummus cucumber and tomatos ( for my gluten free son will either get him a gluten free Pops bagels or could make a salad put of it and maybe add some chicken or falafels from Afia )
