What's for Dinner & School Lunch : Hello November!
Week of 11/ 3
OMG how are we in the second to last month of the year? I dont know about you but I am SO BUSY … and a glance at my calendar tells me its just going to stay that way pretty much until the end of the year! Because of busy schedules and the colder temperature: I love roasting this time of the year and soups and stews. Easy and healthy!
Here is what’s for dinner this week( 2 adults, 3 kids ages 3,12, & 15) and school lunch x 2 (3 yr old and 12 year old). Most recipes are gluten free since 2 of us are gluten free. This week both kids have a day off from school so only sharing 4 lunches!
Monday: Stovetop Pot Roast
This recipe takes 3 hours BUT requires little to zero handling (but you do have to be home- if not you can look for a slow cooker recipe online. If you go that route make sure you are using a PFAS free sow cooker. This is the one I have - AIDASPICKS for a discount!) ). It has minimal ingredients (so prep is SO quick and easy) and yet tastes super yummy and comforting. I will serve on greens for me and rice for the fam, but mashed potatoes or risotto would be amazing too
Tuesday Whole Roasted Chicken with roasted veggies
Another easy prep meal: First preheat oven to 425 F then I pat chicken dry and rub olive oil salt and pepper on theWhole chicken, and add potatoes, Brussels sprouts and coliflowers (will marinate these in olive oil, salt and some rosemary) and serve with black beans I made on Sunday). Cook for about 1 1/2 hours (or until its juice runs clear) I also make 2 whole chickens so that I can use the second chicken for school lunch and my quick chicken salads during the rest of the week for my own lunch too)
Wednesday:Coconut Chicken Curry
This tasty (and yes SIMPLE) recipe is liked by everyone from the toddler to the adults in the house! You can also make it with chickpeas for a vegetarian alternative
Thursday: lasagna ( gluten free: change the pasta)
I dont really follow a lasagna recipe but this one is pretty close to what I make at home
Friday: Chicken Pozole (slow cooker)
We have been making this recipe for like 9 years now! Kids love this recipe because its almost like a DIY situation where I serve bowls with fresh white cheese, pan fried tortillas, cilantro, avocado and they can choose to add what they wish to their soup base. If you dont have a slow cooker you can cook for about an hour on the stovetop
The Mexican hominy comes in a can which means some level of bisphenol exposure. The way around this is to omit ( or you can half the amount you add, but if you do make sure you rinse well after taking out of the can to remove some residue)
SCHOOL LUNCH
Parent Teacher conferences at both schools this week - which means 4 lunches.
Mediterranean platter lunch: hummus from our Farmers Market, carrots, tomatoes and cucumbers, falafel and pita bread
beef sandwich with leftover beef pot roast (for the gluten free lunch: with fresh quinoa)
fresh rice with leftover shredded chicken and black beans
bagel pizza with organic bagel and tomato sauce and shredded cheese ( Pops bagels for the gluten free option)
