Whats for Dinner & School Lunch: week of 12/1
I hope everyone had a lovely Thanksgiving holiday!
Here we are and it's December our last month of the year! My son informed me that he has 15 days of school left. OMG. This year has flown by.
But, for now, we're back with meal planning for these last few weeks of 2025!
Here is what’s for dinner this week (2 adults and 3 kids ages 2,12 & 15) and school lunch x 2 (3 year old and 12 year old) . Most recipes are gluten free since 2 of us are gluten free. As always, we meal plan to make eating healthy whole foods meals easier. Processed foods (even organic) are our main source of phthalate exposure today. The simple act of cooking at home greatly reduces your exposure to this harmful endocrine (hormone) mimicking chemical.
You guys know my love for bowls because the kids love them, they're an easy way to get some veggies in, and they're always really easy to put together. You can serve this one with quinoa or rice or any base of your liking ( I might just have mine on top of some greens)
Tuesday: chicken and mushroom
The only sub here, for those who are gluten-free, is the flour. You can use your gluten-free flour of your liking.
Wednesday: chicken parm
This is a gluten-free take on the classic chicken Parm. I like to serve chicken Parm with a side of steamed broccoli
Thursday: Black bean and sweet potato chili
Meat free dinners are getting harder with the kids. But this is a chunky chili that leaves the hungriest of growing teens satisfied.
Friday: Creamy Cauliflower Soup with grilled cheese
I have been craving creamy cauliflower soup for a few days so I have this scheduled for Friday, but I might pull it up at some point for earlier in the week lol. I like to top this with toasted sunflower seeds or something crunchy like that
School Lunch
mini bagel cucumber and cream cheese sandwhich and leftover chicken meatballs on quinoa from this weekend for my gluten free son
leftover ground beef lettuce cups ( from Monday’s dinner) with tiny diced tomatos and diced cheddar cheese
homemade chicken nuggets with panko ( will have these prepped the night before while I'm making the chicken Parm and just cook them on the stove top in the morning)
gluten free pasta with green beens and butter and parmesan
black beans and quinoa
