What’s for Dinner and School Lunch This Week: Week of 6/1/2026
Happy Sunday!
This is the last week of school for two of my three kids, and I am so so excited for summer to start. This will also be the last " what's for dinner and school lunch?" post until school starts again in the fall! I know we all still need to make dinner during the summer so feel free to look back at older posts from the school year if you ever need info! In the summer, I also like to incorporate a lot of grilling!
I would love any feedback or ideas or comments that you might have from this series so that I can make it even better for the next school year! I wish you all a wonderful relaxing fun summer!
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 15,12 and 4.

School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: Shawarma chicken " taco" night
I found this recipe in a cookbook called "Keep it zesty" and kind of love the concept. Instead of tacos, I will use pita bread for those that are not gluten-free. if you are in a rush, you don't have to do all the sides just pick two or three of them!
Tuesday: chicken enchiladas in tomatillo sauce
I make a simpler variation on this linked recipe. The enchilada sauce I just make by placing the tomatillos in the oven with a little bit of salt and olive oil and then I mix it. I boil the chicken and once its cooked i shred ( you could also use rotisserie chicken or leftover if you roast your own chicken) and add plenty of sauce to the chicken . Finally, I don't pre-fry tortillas instead I use corn tortillas and roll them up with the shredded chicken inside and then add more sauce on top with some cheese before I place it in the oven
Wednesday: ground beef, picadillo, black, bean, sweet potato quinoa, bowl
basically the linked recipe but instead of cottage cheese, I make quinoa.
Thursday: lasagna
Making this one today so that I just need to reheat on Thursday and it's really the best recipe out there but if you're making this during the week, you will likely want something slightly simpler ( ie use premade tomato sauce!)
Friday: pizza Friday! it's been a while since we've made homemade pizza. We used to have a pizza oven in our old house and would make it every week. This week we will make it in our normal oven and use a premade sourdough pizza dough from Erewhon ( my gluten-free son will not be home)
SCHOOL LUNCH
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
sliced turkey, tomatoes, avocado, sandwich
pasta ( Jovial pasta for gluten free)
leftover chicken with enchilada sauce on rice crackers
leftover black beans with fresh rice made in the morning
last day of school, so no lunch needed!!!
