What's for Dinner & School Lunch: Week of 12/15
I am so happy its the last week of school for the year. Not going to lie: I am burned out and need some time off!
I am grateful for these weekly meal plans because it makes my week SO MUCH EASIER to know exactly what we are eating each day and know I have the ingredients ( and also less eating out and take-out means less chemical exposure to chemicals like PFAS and phthalates and bisphenols!). I truly hope it has in some way made life easier for you too.

Here is what’s for dinner this week (2 adults and 3 kids (15,12 and 3) and school lunch x two. Most recipes are gluten free (or easy to make gluten free)

MONDAY: Curried lentil soup
This is a fav of 4/5 of the family members. Super warm and tasty and great for lunch the next day too. Serve with naan or rice or eat on its own.
TUESDAY: Cauliflower baked ziti
I have not made this recipe, but it looks yummy and satisfying and easy for a weeknight vegetarian option!
WEDNESDAY: Chicken and broccoli
Sometimes these basic recipes are the best for their simplicity. serve on a bed of greens or on rice or noodles!
THURSDAY: Ground Turkey Sweet Potato Skillet
Perfect for winter and easy too! I like this on lettuce cups
FRIDAY: Gluten Free Shepherds Pie
SCHOOL LUNCH
It’s a short week of school for 2 of the kids ( the 2 I send lunch for) so just 3 days of packing lunch for me!!!
Monday: shredded carrots and hummus sandwich ( go heavy on the hummus since most breads will absorb the hummus). For my older son I add tomato slices and lettuce and make it a vegetable sandwich!
Tuesday: leftover curried lentils
Wednesday: pasta with green beans and sausage
