Happy Sunday!
This week marks the end of summer… like for real…. My third is heading back to preschool this week which means: all three kids are back! So here. We. Goooooo!
This week is a bit chicken heavy but you can always substitute one chicken day with beef or turkey or something else!
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 16,12 and 4.

School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.

DINNER
Monday: Teriyaki chicken with broccoli and rice
Easy and everyone likes it. This week I am serving rice two days so in order to reduce arsenic I will soak our rice overnight and thoroughly rinse before cooking. We use Lundberg white rice which is also lower in arsenic than other rices. As for the recipe: I would skip the sugar… but you can also buy it premade.
Tuesday: Meatloaf with mashed potatoes
Another family favorite. I feel like I will get rave reviews for dinner this week (it might be silent but I KNOW they will feel it in their hearts LOL). As for the recipe: we have made it many times and its great… it is gluten free but we all love it.
Wednesday: Crock Pot Moroccan chicken
If you have been following me for a while you know I like to incorporate slow cookers at least once a week…this Moroccan chicken exposes kids to some diverse spices without it being to crazy (read: even picky eaters can eat it)
Thursday: Cheesy Chicken and rice skillet
I didn’t want to schedule another chicken recipe BUT this one is super cozy and easy…. So here we are. I am sure you could make this with steak or maybe ground turkey?
Friday: Pasta with mushrooms, olive oil and garlic
Friday pasta night- its a thing… its the easiest thing for a Friday!!! For the sauce just cook a lot of garlic (the more the marrier if you love garlic if not use less) in olive oil then add the mushrooms and some salt. Once they are cooked just add to pasta.
School Lunch
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
