What’s for Dinner and School Lunch, Week of 11/17

Dinner
Finally a “normal”week! Everyone is home and, other than my husband having some work events, we will all be home for dinner this week!
Here is what’s for dinner this week (2 adults and 3 kids ages 2,12 & 15). and school lunch x 2 (3 yer old and 12 year old) . Most recipes are gluten free since 2 of us are gluten free. As always, we meal plan to make eating healthy whole foods meals easier. Processed foods (even organic) are our main source of phthalate exposure today. The simple act of cooking at home greatly reduces your exposure to this harmful endocrine (hormone) mimicking chemical.
Monday : Thai Basil Beef (without the ground ginger )
Tuesday: Pollo sudado -style chicken stew
This is SUPER simple and fast and at the same time warm and cozy for a chilly day
(omitting the teaspoons chicken stock concentrate and the sazon seasoning)
Wednesday: Pernil Style Pork
I am actually not a fan of pork, even though my Cuban parents cooked it for holidays etc. This, however is a nice and easy recipe and sometimes its good to vary your protein sources !
Thursday: Ginger- garlic Chicken stir Fry
Another basic recipe- I grew up eating this at home at least every two weeks. Instead of bell peppers we add broccoli and mushrooms because my kids don’t like bell peppers
Friday :one-pot chicken, broccoli, and rice with a date and herb gremolata
I am a big fan of one pot recipes (less clean up) especially when my kids have friends coming over to dinner!
School Lunch
Monday: buckwheat galette with mushroom and cheese
This sounds fancy but so so easy. You can fill with anything but since dinners this week are animal protein heavy want a veggie option … I like this recipe for the crepe/ galette (omit the sugar- not needed IMO):
Tuesday: leftover Thai basil beef with lettuce wraps
Wednesday: Gluten free pasta with parmesan and green beans
Thursday: pork pita sandwich (for my gluten free son will serve with a gluten free bun or rice) with leftover pork
Friday: black bean, corn, tomato, avocado salad with a chicken quesadilla (on organic corn tortilla so its gluten free)
Next week 2 of the 3 kids are off from school for the Thanksgiving Holiday so I wont be publishing my weekly meal plans! Happy Thanksgiving to you- among the many things I am grateful for are you guys, my community!
