What's for dinner & school lunch: Week of 3/9
Happy Sunday!
Next week is my birthday! So, in honor of me :) I am going to be making some of my favorite recipes this week! ( ps I’m doing a few giveaways this week over on Instagram. One of them is for some of my favorite lunch containers- so if you're interested, pay attention to Instagram stories! ).
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 15,12 and 4.
Scroll down and you will find what I send for lunch for two of my three kids. School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: Best Guacamole Turkey Burger
These are the tastiest turkey burgers, you will ever have ! If you can make it on the grill, they are that much better. I will just serve mine on a bit of greens, but everyone else will have traditional hamburger rolls.
Tuesday: Crispy Striped Bass with Citrus Soba

I love love love fish but don't eat it often because of how contaminated fish can be nowadays ( Micro plastics, PFAS, PCBs and more) ... well, if you've been following for a while, you might've noticed. I don't include a lot of fish recipes on my Monday to Friday. Meal plans, let us because I will usually leave fish for the ocasional weekend that I might eating out! but it's my birthday week, so decided to incorporate one recipe this week!
Wednesday: Crockpot Green Chicken Pozole
This recipe from the group webpage has been a favorite in my house for like seven or eight years! The kids love that they get to add different things to their soup. I love how easy it is.
ThUrsday: red lentil curry
A favorite in our house too- we will likely go out to eat on Thursday but will make this for school lunch and weekend lunch!
Friday: Mango Mama Salad with steak
this is such a fresh tasty salad - the kids eat most of it ( minus onions and peppers) pairing with grilled steak
SCHOOL LUNCH
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.
