What’s for Dinner and School Lunch this Halloween Week
Week of October 27, 2025
Here is what’s for dinner ( 2 adults, 3 kids ages 3,12, & 15) and school lunch x 2 (3 yr old and 12 year old). Most recipes are gluten free since 2 of us are gluten free. This week I am using mostly old recipes that I am not sure where they came from - so no links except for Friday! BUT sharing basic recipes
Monday: Mediterranean chicken bowls
Marinate 1 1/2 pounds of chicken breasts , 2 tablespoons olive oil, the juice of one lemon, two cloves of garlic salt and pepper for about 30 minutes. Grill or bake until cooked through. Serve with either cauliflower rice or normal rice mixed in with chopped zucchini and carrots (if your kids dont like zucchini you can mix with green beans or corn instead). You can serve it with a yogurt, garlic dip by just adding minced garlic and some lemon to some Greek yogurt.
Tuesday: Beef and veggie lettuce wraps
Sauté one onion then add 1 1/2 pounds of ground beef, shredded carrots, one bell pepper, and a teaspoon of cumin, salt, and pepper. Serve in lettuce wraps with avocado and chopped tomatoes. I might add a side of mashed potatoes.
Wednesday: Herbed chicken and veggies
Mix 2 tablespoons of olive oil, 1 teaspoon of thyme, 1 teaspoon of rosemary, one garlic clove, salt and pepper and rub onto aprox 1.5 lbs chicken thighs , Bake at 400°F for about 35 minutes. (Alternately you can buy a hole chicken, marinate the same and place in oven with cubed potatoes or sweet potatoes.)
Simultaneously, you can roast some broccoli and cauliflower ( I like to mix it with some olive oil, salt and pepper, and then put it to roast ) and the only salad my kids will eat : lettuce, tomato, feta cheese
Thursday: Turkey meatballs in tomato sauce with gluten-free pasta
I am going to try a new gluten-free turkey meatball recipe instead of panko this uses almond flower: mix one and a half pounds of ground turkey, half a cup of almond flour, one egg, half a teaspoon of oregano, half a teaspoon of garlic powder, salt and pepper, and some onion powder. Mix the ingredients, form the meatballs, and bake at 375°F for 20 minutes. Simmer in homemade tomato sauce or a store bought that you like (make sure it is packaged in glass not canned to avoid BPA)
Serve with the pasta of your choice (I like Jovial gluten free pasta because the chickpea pasta has been found to contain Glyphosate in the past).
Friday ( Halloween) : Curried Red lentils with pumpernickel bread
We like to feed the kids something hearty before we go out to trick-or-treating just so that they’re not starving when they’re receiving all the candy. So we’re going to do our favorite curry lentil soup… we use orange lentils always… so its orange too and so to go with a theme I might get pumpernickel bread (black )and serve that for dipping on the side.
School LUNCH
Falafel, hummus, tomatoes and cucumbers
Mexican chicken with quinoa : shred chicken from the night before and mix with fresh quinoa and corn ( frozen, not canned, to avoid BPA) and add diced tomatoes and avocado ( add lemon juice to avoid browning)
Beef and cheese quesadillas: corn tortillas and add last nights beef and orange sharp cheddar cheese. Will cut out 2 triangles to make it look like a jack o lantern for Halloween week
Tomato, mozzarella di buffala and pesto sandwich on gluten free bread ( LA based Modern Bread and Bagel ( think they ship nation wide) makes GG hamburger buns and rolls that are great for school sandwiches bc they remain soft
mac and cheese ( homemade with cheddar cheese for the Halloween inspo)
