What's for Dinner & School Lunch Week of 3/16/26
Happy Sunday!
Hope you all had a lovely weekend. This is our last week before our two week break for spring break so, while I'm mentally on vacation, dinner has to get cooked and school lunches have to get made ... so here goes.
As always, these recipes are mostly gluten-free ( 2 of us are gluten-free at home, if any changes have to be made to make the recipe gluten-free, I do specify in the recipe.) and designed for two adults and three kids ages 15,12 and 4.

School lunch is yet another source of harmful chemicals for most kids so, while it can be a pain to prep lunch in the morning, it is an important way to reduce overall toxic burden in kiddos, especially the youngest ones! I often send leftovers to make my life easier.
DINNER
Monday: chicken soup
feeling like a cozy chunky soup and this one is a great alternative
Tuesday: Quinoa Kibbeh (Gluten-Free Kibbeh Recipe)
My Brazilian mother-in-law loves making this for the family when she comes to visit. The traditional recipe however, uses vulgar and is not gluten-free. The kids do love it so we are going to try this gluten-free version. Skipping the pomegranate molasses because it's unnecessary to add sweetness to this recipe , I also skipped over a lot of the spices that I don't have so use what you have and don't stress
Wednesday: Hot Honey Chicken and Quinoa Bowls
This recipe has a lot of ingredients so I'm thinking I will simplify it and just have the quinoa, the chicken and the corn. I think it would be delicious with grilled peach and pineapple but it's not quite peach season right now so I'm going to skip those ( if I find a ripe pineapple, I'll include that)
ThUrsday: hot honey beef jacket sweet potato
The only difference is that I'm going to cook the sweet potatoes in the oven hole ( a la baked potato) then slice them open and serve the meat and the avocado on top
Friday: pasta with fresh tomato sauce
Easy for Friday. The tomato sauce I just made with tons of garlic and okive oil.... cook these on a skillet, but don't let it burn. Add tons of grape tomatoes whole ( like 2Packs ) and salt and some fresh basil and just cook until the tomatoes are soft. It is delicious. You can serve with the tomatoes hole or you can blend it.
SCHOOL LUNCH
Even though Spring Break doesn't start until the following week for us, this week two of my three kids have days off and early dismissals.ughhhhh anyway that is why I'm only including for school lunches this week
We use bento style school lunch containers for my preschooler and larger containers made out of stainless steel for my sixth grader. For the preschooler, items I usually send her with include: berries, tomatoes, cucumbers, kiwi, grapes, carrots and hummus, edamame, organic corn, green bean ( with some butter)... These are usually snack foods that we find travel well.

black beans and rice ( I am making black beans from scratch today, Sunday however you could always use canned black beans that come in glass. I would just add some cooked garlic and olive oil and maybe add some onions to cook those and then add the black beans just to give it more taste.)
