Dinner
Here is what’s for dinner ( this week my mom is visiting for a few days so: 3 adults, 3 kids ages 3,12, & 15) and school lunch x2 (3 yr old and 12 year old). Most recipes are gluten free since 2 of us are gluten free.
Monday: Cuban Arroz con pollo ( my mom is in town so she will make her version of this which is delicious but it’s very similar to this recipe.
Tuesday: Gluten Free beef milanesa with a side of steamed broccoli
Wednesday: Herbed Rice Meatballs with Lemon Tomato Sauce from Eden Eats served on quinoa
Thursday: Ido’s Chicken Kebabs from Eden Eats with a simple house salad (lettuce, tomato and feta cheese )
Friday: Creamy Italian Sausage And Chickpea Soup from “ Just a Little Bit of Bacon"‘
Lunches: gluten free for my 3 and 12 year old
Homemade gluten free panko chicken nuggets ( prepped Sunday night and cooked in the am)
Left over arroz con pollo
Field trip for the 12 year old (no school for preschooler): turkey, hummus, tomato sandwhich on gluten free chestnut bread from LA bakery Kneady
No school Thursday
Soba noodles with carrots, edamame and/or Pasta and meatballs from night before
How to make it lower tox:
Cooking at home vs eating out automatically cuts exposure to PFAS (often found in cooking supplies and takeout containers)
Cooking at home vs eating out automatically cuts exposure to phathlates (restaurant storage, gloves and manufacturing facilities)
Choosing organic when possible: we eat almost 100% organic at home. But if you need to prioritize focus on poultry/meat, dairy and produce
cook on stainless steel and/or cast iron
Avoid BPA by using Jovial chickpeas that come in a glass jar instead of canned chickpeas
Avoid arsenic in rice by choosing Lundberg organic rice (they test for Arsenic)
Bon appetite! Have a great week!
