No Bake Chocolate Almond Butter Bars
High Protein and Gluten Free!
I am not a baker, I love cooking but not really a fan of baking. However, this Sunday my kids were asking for a treat and I serendipitously came across a recipe over at “Vanilla and Bean” that looked yummy AND easy AND only required 5 ingredients (which I had!) … so I gave it a try and was not disappointed… which is why I am sharing it with you today!

ITs delicious…. what more can you want?!
For the Dough:
1 C almond butter
1/4 C Organic Maple Syrup
1 tsp Vanilla extract
1 1/4 C Fine Almond Flour blanched
1/4 C (25g) Chocolate Chip plus more for sprinkling
1/4 tsp Fine Sea Salt
For the Chocolate Topping:
4 oz Chocolate Chips
2 Tbs almond butter
1/2 tsp salt
Mix the dough ingredients
Grease a rectangular glass pyrex or loaf pan (9”x5”) twith coconut oil. Set aside.
In a medium bowl, mix the dough ingredients until smooth.
Using your hands, firmly press the dough into the prepared pan in an even layer.
For the chocolate topping, mix the peanut butter and chocolate over very low heat on the stovetop. Mix constantly until chocolate is melted and smooth (avoid burning!)
Pour and spread the chocolate over the dough into an even layer.
Place in the refrigerator until hard (about 2 hours)
Can last in the refridgerator in a sealed container for about 2 weeks.
